When writing Jay, think of everything mean and illegal a guy can do in the ring. He's an honest to god prick who only cares about winning. If the ropes are close enough, he'll use them to help his pin. If the referee isn't looking, he'll throw an eye poke or do a low blow. He's unethical and takes all short cuts to win. When he isn't winning, he's frustrated. He likes to be in control and often will overcompensate to catch up if he's down. This is bad. When it comes to moves procedure, use the head. A lot of his moves, DDTs especially, are meant to work on his head. He uses neck chokes and headlocks because he wants to soften the spot where his finisher lands. You can work the body with jabs but the ultimate goal of the jabs and uppercuts should be to distract the opponent's hands so he has a free shot at the face or back of head. Yes, he'll go after an opponent with their back to him.
The Rich Rollins superkick is a big deal. He'll use it to end matches often or to turn the momentum since it's so quick to execute. He defeated Rich Rollins in a ladder match where their bandanas were hanging above the ring and laster that night, Rich committed suicide in his hotel room. Good story, emotion behind it.
In terms of weapons, use 'em. He likes to cheat and if it means he'll have the upper hand then he'll do it.
Also, he smokes so many cigarettes that you can notice it in the ring. He gets winded at times but fights through it. He's tough and ignores the fact that his lungs are black.
PM me if you have any questions.
